Gan-jang is known as soy sauce, however, Gan-jang is naturally fermented one that can add diverse taste-saltiness, sweetness, and vegetal flavors.
Fermentation is crucial point.
Grapes become wine through yeast fermentation.
Lettuce and radish become Kimchee through yeast and lactobacillus fermentation.
Beans become Doenjang and Gan-jang through mold, bacillus, and yeast fermentation, which means three different sources of fermentation make Jang a perfect healthful food.
