Doenjang is a good source of protein, and once it is fermented, the protein of beans becomes a form of amino acid, more body absorption friendly substance.
It contains unsaturated fat, probiotics and a small amount of vitamin B1, B2, C and E. Fermentation is crucial point.
Grapes become wine through yeast fermentation.
Lettuce and radish become Kimchee through yeast and lactobacillus fermentation. Beans become Doenjang and Gan jang through mold, bacillus, and yeast fermentation, which means three different sources of fermentation make Jang a perfect healthful food.
