Product Information
TG is only a binding agent for protein and cannot be used as a coagulant on
its own. It must be used with other coagulant.
Effectiveness of coagulant mixture decreases when kept for a long term so
use it within 20 minutes after being mixed.
TG is not a coagulant, but a binding enzyme for protein. The reactivity
becomes weaker when the temperature is above 60℃ so soymilk must be cooled
before using. (the optimum temperature is 55℃)
Coagulants are aids to coagulate tofu, not food to be eaten separately.
If coagulants are stored at room temperature for a long term, they will
lump and the effectiveness will be decreased. Coagulants should be
refrigerated.
