Tomatoes are now eaten freely throughout the world, and their consumption is believed to benefit the heart among other things. They contain lycopene, one of the most powerful natural antioxidants, which, especially when tomatoes are cooked, has been found to help prevent prostate cancer. Tomatine is effective in inhibiting fungus infection in human body. It also possesses some anti-inflammatory action and decreases the permeability of blood vessels. Tomato varieties are available with double the normal vitamin C, 40 times normal vitamin A, high levels of anthocyanin, and two to four times the normal amount of lycopene. In addition,it contains large amounts of water, vitamins B1 and B2, calcium, phosphorus, iron, adenine, choline, trigenelline and beta-carotene. Tomatoes are available fresh, and in a variety of canned products, such as stewed tomatoes, whole tomatoes, tomato sauce, tomato puree, and diced tomatoes. Tomatoes are often juiced and can be concentrated to produce tomato paste and can also be dried and are sometimes packed in oil this way.

125 million tons of tomatoes were produced in the world in 2005. China, the largest producer, accounted for about one-fourth of the global output.
