Fucoxanthin is red orange powder ,insoluble in water ,soluble in soe organic solvents,such as chloroform .hexane,petroleum ether etc .Its relatively stable in partial acidic solution . weak light and low temperature . Reversible color change will happen under the condition of weak acid and weak base and will be destroyed under the condition of strong alkali ,strong light or high temperature .

In Food Industry : as functional edible pigment ,fucoxanthin can not only improve food color ,but also increase the nutrition ,and as functional antioxidants,the shelf life of food can be prolonged effectively ,its suitable for developing functional food .
